Snickerdoodles

1 cup salted butter, softened
1 1/2 cups sugar
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 – 1 teaspoon table salt (I like a full tsp, it really enhances the flavor, just my preference)
2 teaspoons ground cinnamon
2 – 3 tablespoons sugar
  1. Preheat oven to 350.
  2. Cream butter, sugar, and eggs together until they are fluffy and light. Mix together all the dry ingredients in another bowl, then combine the dry ingredients with butter mixture to form dough. Place in the fridge until next step is complete.
  3. In a small bowl, combine cinnamon and sugar and set aside.
  4. Remove dough from fridge and form it into 1 inch balls. Roll each ball in the cinnamon and sugar mix and place them on a parchment lined cookie sheet.  Bake for 8 – 10 minutes, allow to cool, then enjoy.
