Chocolate Cake

2 sticks salted butter, softened

2 1/2 cups packed brown sugar

1/2 cup white sugar

3 large eggs

2 teaspoons vanilla extract

2 2/3 cups all-purpose flour

3/4 cup cocoa powder

1/3 cup hot chocolate powder

3 teaspoons baking soda

1 teaspoon salt

1/2 cup sour cream

1/4 cup cream cheese softened

1 1/2 cups boiling water

 

  1. Preheat oven to 350°.
  2. Grease and flour three 9-in. round pans.
  3. Cream butter and sugars in a large bowl until fluffy. Add eggs, one at a time, beating well after each egg, then add in vanilla, sour cream, and cream cheese . In another bowl, whisk together the dry ingredients, and add to the creamed mixture a third at a time. Beat well, then stir in water until completely blended.
  4. Pour batter into the baking pans. Bake 35-40 minutes or until a toothpick comes out clean when inserted in the middle.
  5. Once done, allow pans to cool before moving the cakes to a wire rack for complete cooling.
