Blueberry Apple Anytime Pie

This recipe is one of my sons favorites, and mine too. He likes to have this pie for breakfast, so to rid myself of the guilt, I often call it “The Blueberry Apple Breakfast Pie,” but as you’ll see, it is delicious enough to be enjoyed anytime.

Filling:
3 cups frozen blue berries (I use frozen because they are an on hand item for me)
3 Lady Alice apples, peeled and cubed (you can use whichever apple species you prefer)
2/3 cups sugar
1 teaspoon cinnamon
2 teaspoon lemon juice
1/4 cup cornstarch
Pinch of salt

Crust:
2 1/2 cups flour
2 1/2 sticks chilled butter, cubed
1 tablespoon sugar
3/4 teaspoon salt
6 tablespoons cold water

Additional:
2 tablespoons butter, melted
2 tablespoons sugar

For Crust:

In a mixing bowl, combine flour, butter, sugar and salt. Roughly mix and blend to form crumbly mixture. Add water and mix to form into a dough ball. Once dough is formed divide into two dough balls, wrap each in plastic wrap and place in the fridge while filling is prepared.
For filling:
In a mixing bowl, combine all filling ingredients, drain blueberries a little before and, if necessary, but do not completely dry. Mix well, and set aside.
Put it together:
Remove dough from fridge, and place on lightly floured surface. Roll dough out 1/8 inch thick, making sure it can fit your pan and leave you a 2 inch overlay. Gently mold the dough to the pie pan. Pour in blueberry mixture. Roll out other piece of dough about 1/8 inch thick. Place over pan and roll and pinch overlaps together. Cut slits into top of crust to allow it to vent. Drizzle with melted butter and sprinkle with sugar.  Place on parchment lined cookie sheet and place on center rack of oven. Bake for 35 – 45 min or until bubbling over and crust is golden brown.

For lattice crust option:

Cut dough into 1/2 inch strips and lay all strips of one direction. Then using one strip at a time, weave the strip over one already laid strip, then under the next already laid strip until the strip reaches the end. Once this is done for the whole pie, pinch edges around the pie together and place in oven.

Allow to cool, eat and enjoy!
